It is only within the past thirty years that the principles and practices of food preservation have received the intelligent investigation which they merit. Although there are yet many problems demanding solution, much has been accomplished toward an exact understanding of the scientific principles underlying the manufacture of food products. The preparation and preservation of fruit and vegetable products have become of great economic importance, but this subject has not received the attention it deserves in the curricula of educational institutions. In many horticultural industries, manufacturing and marketing have become of as great importance as production. There is a rapidly growing demand for persons trained in the scientific principles underlying these industries. Practical knowledge alone no longer suffices. This manual meets the need for a reliable guide in laboratory courses in 'colleges of agriculture, schools of domestic science, etc., in the manu facture, preservation and examination of fruit and vegetable products. It is the outgrowth of a course given at the University of California during the past eleven years. The Assignments are designed to Simulate as closely as is possible on a small scale present commercial practices as well as to illustrate the fundamental scientific principles involved. Although this manual Should be supplemented by lectures or books giving correlated information, much valuable data are included, especially in tabular form. B. Brownell, Professor of School Sciences, University of Nebraska. (2) The idea of prepar ing laboratory exercises in field crops and making available to schools the necessary supplies for teaching the same, Originated ten or twelve years ago with Professor's E. G. Mont'gomery and T. L. Lyon, both' formerly of Nebraska, but now at Cornell University. The manual of these two teachers, Examining and Grading Grains, has done much to encourage and syste matize laboratory study in field crops throughout the United States. It was largely the de mand for field crop material created by this manual which revived into life the abandonedidea of supplying field crop laboratory material which had formerly been carried on by the Department of Agronomy of the University of Nebraska. Without the use of ideas from these two sources, the work as presented in this manual could scarcely have been possible. Most of the laboratory exercises presented in this manual have passed through several mimeographed editions, and have been used in one or more of the following Nebraska schools: Teachers' College High School, Lincoln; School of Agriculture, Lincoln; School of Agriculture, Curtis. Laboratory instruction as here outlined is designed to accompany classroom instruction. A division of time that will probably fit most schools is as follows. A majority of the children who attend the village and rural schools will remain in the country, and it is right and proper that they should be educated in the things with which they will have to deal ever}' day of their lives. The success of the work will depend very largely upon the teacher. Pupils are naturally interested in those things with which they are constantly in contact, and need only the encouragement of the teacher to direct their enthusiasm. In this manual a few exercises are given to illustrate some of the fundamental principles of plant growth, but the central idea throughout is the practical application of these principles to crop production and improvement. Some of the exercises are original, but many of them have been adapted from the publications of the United States Department of Agriculture and from the bulletins of the Extension Department of the Ohio State University. Of commercial kzcrzo7 in 75 cc. Of warm water, cool, and pour slowly into it, with constant stirring, 115 cc. Of commercial sulphuric acid (h2804). The potas sium dichromate solution should be placed in a No. 7 evap orating dish, if convenient, before pouring the sulphuric acid into it. When the solution is completely cooled, it should be transferred to a 250 cc. Wide-mouthed bottle. (be careful in making this mixture, so as not to spill it on your clothes.) Invert the burettes in the cleaning mix ture, attach the rubber tubing, draw up to the 50 cc. Mark, and allow to stand for at least half an hour before being used. (see that the burette stopcocks work smoothly and are not clogged with grease.) Coat the burette stopcocks with a very small amount of vaseline to prevent sticking. The cleaning mixture is to be used throughout the course. Avoid the addition of water to the cleaning mixture. A burette is clean when the drops of water will not adhere to the sides. Other useful cleaning mixtures are soap solutions, alcoholic koh solutions, and ammoniacal alcohol solutions.
