Book excerpt: In Land of Milk and Money, Alan I Marcus examines the establishment of the dairy industry in the United States South during the 1920s. Looking specifically at the internal history of the Borden Company—the world’s largest dairy firm—as well as small-town efforts to lure industry and manufacturing south, Marcus suggests that the rise of the modern dairy business resulted from debates and redefinitions that occurred in both the northern industrial sector and southern towns. Condensed milk production in Starkville, Mississippi, the location of Borden’s and the South’s first condensery, so exceeded expectations that it emerged as a touchstone for success. Starkville’s vigorous self-promotion acted as a public relations campaign that inspired towns in Tennessee, Alabama, Louisiana, and Texas to entice northern milk concerns looking to relocate. Local officials throughout the South urged farmers, including Black sharecroppers and tenants, to add dairying to their operations to make their locales more attractive to northern interests. Many did so only after small-town commercial elites convinced them of dairying’s potential profitability. Land of Milk and Money focuses on small-town businessmen rather than scientists and the federal government, two groups that pushed for agricultural diversification in the South for nearly four decades with little to no success. As many towns in rural America faced extinction due to migration, northern manufacturers’ creation of regional facilities proved a potent means to boost profits and remain relevant during uncertain economic times. While scholars have long emphasized northern efforts to decentralize production during this period, Marcus’s study examines the ramifications of those efforts for the South through the singular success of the southern dairy business. The presence of local dairying operations afforded small towns a measure of independence and stability, allowing them to diversify their economies and better weather the economic turmoil of the Great Depression.

While interest in rainforests and the movement for their conservation are often mistakenly portrayed as features of the last few decades, the debate over human usage of rainforests stretches well back into the nineteenth century. In the modern world, rainforests are generally considered the most attractive of the ecosystems, being seen as lush, vibrant, immense, mysterious, spiritual and romantic. Rainforests hold a special place; both providing a direct link to Gondwanaland and the dinosaurs and today being the home of endangered species and highly rich in biodiversity. They are also a critical part of Australia’s heritage. Indeed, large areas of Australian rainforests are now covered by World Heritage Listing. However, they also represent a dissonant heritage. What exactly constitutes rainforest, how it should be managed and used, and how much should be protected are all issues which remain hotly contested. Debates around rainforests are particularly dominated by the contradiction of competing views and uses – seeing rainforests either as untapped resources for agriculture and forestry versus valuing and preserving them as attractive and sublime natural wonders. Australia fits into this global story as a prime example but is also of interest for its aspects that are exceptional, including the intensity of clearing at certain periods and for its place in the early development of national parks. This book will be of great interest to students and scholars of Environmental History, Australian History and Comparative History.

Book excerpt: Originally published in 1966, this work by G. E. Fussell is a thorough examination of the role played by the English dairy farmer over the past four hundred years. Beginning his study with the cow he gives an account of the improved breeding and feeding methods that make today's cow a totally different beast to that of the Tudor farmer. A chapter is devoted to the cultivation of fodder crops and another to the comfort of the cow for, as the author states, pleasant conditions are an important factor in encouraging its productivity. The dairy industry, no less than any other in the nineteenth century, was the scene of numerous devices and inventions designed to improve milking methods. This, together with the development of the sale of milk in a liquid form, is discussed in later chapters. The practical difficulties of transporting milk had until about 1850 caused the major part of the milk produced to be turned into butter and cheese and the varying products of differing regions are fully described. Towards the end of the nineteenth century, however, the number of dairies prepared to retail milk grew in number to accommodate an ever increasing rate of milk consumption. Numerous farming textbooks published during the period and contemporary descriptions of the farming scene form the background for this scholarly appraisal. No other book has treated the English dairy farmer in such detail and, in drawing upon such a wealth of illustrative material to support his conclusions, G. E. Fussell has produced a work which will be valued by all agricultural historians.
